Anders Næss
Anders Næss has been running an ecological grainfarm in Buskerud for 20 years and has been an entrepeneur for the mill- and seed enterprise Økologisk Spesialkorn (which are now owned by 11 ecograin farmers). He specialises in old graintypes and their cultivation, nutritional aspects and baking properties. Næss is an eager sourdough-baker for testing of grain. His favorite flours are: spelt, emmer and svedjerug.
