The relationship between grain and humanity is long standing. Grain is one of our main sources of vitamins and minerals, and has been our companion since we started farming. But how has grain, and the way we use and relate to it, changed since then?
As a part of Åsa Sonjasdotter’s contribution Cultivating Stories we visit Bakstehuset on Askøy to look closer at the history of grain, and its unique properties and abilities, with Anders Næss from Spesialkorn. We will also demonstrate how to bake with sourdough with Bakstehuset´s owner Mariann Kvarme. It will be possible to buy some of their delicious treats to bring back home with you.
There is no charge to participate in the workshop, and there will be free transport from Belgin (Rasmus Meyers Allé 3) at 5pm, with a return to the city centre from Askøy at 9pm. You can also arrive by car or bus.

Anders Næss has been running an ecological grainfarm in Buskerud for 20 years and has been an entrepeneur for the mill- and seed enterprise Økologisk Spesialkorn (which are now owned by 11 ecograin farmers). He specialises in old graintypes and their cultivation, nutritional aspects and baking properties. Næss e is an eager sourdoughbaker for testing of grain. His favorite flours are: spelt, emmer and svedjerug.
Mariann Kvarme rund the ecological, woodstove-bakery Bakstehuset together with her family on the island of Askøy, located right outside Bergen.There they bake with the best and finest ecological commodoties, preferably short travelled. As they would say: no cheating, just honest pastries!
Åsa Sonjasdotter is an artist, PhD candidate at Valand Academy in Gothenburg, Sweden, and a founding member of The Neighbourhood Academy, a bottom- up learning site and branch of Prinzessinnengarten, an urban garden in Berlin. Cultivating Stories, an installation in three parts on view at Bergen Assembly 2019, continues Åsa Sonjasdotter’s longstanding research into the history of plants and their cultivation. Read more…
